Crispy Cheesy Mashed Potato Bites

Irresistible bites of crispy comfort, these mashed potato nuggets are filled with sharp cheddar and fresh green onions, perfect for any occasion.

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine mashed potatoes, cheese, green onions, egg, salt, and pepper until well blended.
  2. Form the mixture into small balls or patties, about an inch in diameter.
  3. Roll each bite in breadcrumbs to coat evenly.
  4. Heat oil in a frying pan over medium heat. Test with a small bit of mixture; if it sizzles, the oil is ready.
  5. Carefully add the bites to the hot oil, frying until golden brown, roughly 3-4 minutes per side.
  6. Use a spatula or tongs to remove bites and place them on paper towels to drain excess oil.

Notes

Make-ahead tip: Prepare the mixture a day in advance and refrigerate. For a lighter option, try air-frying or baking at 400°F (200°C) for 20-25 minutes.
