Creamy Tuscan Chicken with Spinach and Mushrooms

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh baby spinach
  • 8 oz mushrooms (button or cremini)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep the chicken: Season chicken breasts generously with salt, pepper, and Italian seasoning on both sides.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes on each side until golden brown.
  3. Remove the chicken from the pan and set aside.
  4. Build the sauce: In the same skillet, reduce heat and add another tablespoon of olive oil. Sauté onion until translucent, then add garlic and cook until fragrant.
  5. Add mushrooms and spinach: Stir in the mushrooms and cook until tender, then fold in the spinach and let it wilt.
  6. Create the cream base: Pour in the heavy cream, scrape browned bits off the bottom, add sun-dried tomatoes, and adjust seasoning. Simmer for 2-3 minutes.
  7. Return the chicken to the skillet, coating with the sauce, and cook on low for another 5 minutes.
  8. Serve and enjoy the creamy Tuscan chicken immediately, garnished if desired.

Notes

For a lighter option, use half-and-half or a plant-based cream. Customize by adding red pepper flakes or artichokes for added flavor.
