Creamy Spinach Salmon Pasta

  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside, making sure to save a little pasta water.
  2. Cook the salmon: In a large skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then cook for about 4-5 minutes on each side or until cooked through and flaky. Remove from the skillet and set aside on a plate.
  3. Sauté the garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until it becomes fragrant.
  4. Add the spinach: Toss in the fresh spinach and sauté until wilted.
  5. Create the sauce: Pour in the heavy cream, stirring to combine, and bring to a gentle simmer. Gradually add the grated Parmesan cheese until it melts.
  6. Combine the pasta: Add the cooked pasta to the skillet, tossing until well coated in the sauce. Add reserved pasta water if needed.
  7. Flake the salmon: Carefully flake the cooked salmon over the pasta and serve with lemon wedges.

Notes

Customize the dish by adding sun-dried tomatoes or fresh herbs for extra flavor.
