Creamy Spaghetti Squash Au Gratin

A comforting dish featuring tender spaghetti squash enveloped in a creamy cheese sauce, topped with a golden crust.

  • 1 medium spaghetti squash
  • 2 cups shredded cheese
  • 1 cup milk or cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut side down on a baking sheet and bake for about 30-40 minutes until tender.
  4. Melt butter in a saucepan over medium heat and add flour to form a roux.
  5. Add milk or cream gradually while stirring continuously until the mixture thickens.
  6. Stir in the shredded cheese, garlic powder, salt, and pepper until the cheese melts.
  7. Scrape the cooked squash flesh with a fork and mix it with the cheese sauce until fully combined.
  8. Transfer the mixture to a baking dish, top with additional cheese if desired, and bake for another 20-25 minutes until bubbly and golden brown.
  9. Garnish with fresh parsley and serve warm.

Notes

Ensure to store leftovers in an airtight container in the fridge for up to three days. It can also be frozen for several weeks.
