Creamy Rotel Pasta with Ground Beef

  • 2 cups Elbow Macaroni
  • 1 lb Ground Beef (or ground turkey)
  • 1 tbsp Olive Oil (for cooking)
  • 1 can Rotel Tomatoes (diced with green chilies)
  • 8 oz Cream Cheese (softened)
  • 1 cup Beef Broth (or vegetable broth)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt (to taste)
  • 1 tsp Pepper (to taste)
  • 1 cup Shredded Cheddar Cheese (or mozzarella)
  • 2 tbsp Fresh Cilantro or Parsley (optional garnish)

Instructions

  1. Boil the Pasta: Bring 8 cups of water to a rolling boil in a large pot. Add a pinch of salt and the 2 cups of elbow macaroni, cooking until al dente, about 7-9 minutes. Drain and set aside.
  2. Cook the Ground Beef: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, about 5-7 minutes, while breaking it apart. Drain excess grease if necessary.
  3. Combine Ingredients: Mix in the can of Rotel tomatoes, 1 cup of beef broth, and the softened 8 oz of cream cheese. Stir until the mixture becomes creamy.
  4. Season: Add garlic powder, onion powder, salt, and pepper, stirring to combine.
  5. Combine Pasta and Sauce: Fold the drained macaroni into the skillet, allowing it to soak up the sauce. Cook for another minute.
  6. Add Cheese: Stir in 1 cup of shredded cheese until melted.
  7. Garnish and Serve: Top with fresh cilantro or parsley and serve warm.

Notes
