- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 cup mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add the chopped mushrooms and cook until they are soft.
- Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
- Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
- Once the rice is creamy and al dente, stir in the Parmesan cheese and heavy cream. Season with salt and pepper.
- Remove from heat and let it cool slightly.
- Once cooled, form the risotto into small balls and place them on a baking sheet.
- Chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Bake the risotto bites for 15-20 minutes until golden brown.
- Garnish with fresh parsley before serving.
Notes
- For a vegan version, substitute Parmesan cheese with nutritional yeast and heavy cream with coconut cream.
- These bites can be made ahead of time and frozen before baking.
- Experiment with different herbs and spices for added flavor.
