Creamy Mushroom Risotto Bites are delicious, bite-sized appetizers made with creamy risotto and flavorful mushrooms, perfect for any occasion.

Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add the chopped mushrooms and cook until they are soft.
  4. Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
  5. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
  6. Once the rice is creamy and al dente, stir in the Parmesan cheese and heavy cream. Season with salt and pepper.
  7. Remove from heat and let it cool slightly.
  8. Once cooled, form the risotto into small balls and place them on a baking sheet.
  9. Chill in the refrigerator for at least 30 minutes.
  10. Preheat the oven to 400°F (200°C). Bake the risotto bites for 15-20 minutes until golden brown.
  11. Garnish with fresh parsley before serving.

Notes

  • For a vegan version, substitute Parmesan cheese with nutritional yeast and heavy cream with coconut cream.
  • These bites can be made ahead of time and frozen before baking.
  • Experiment with different herbs and spices for added flavor.
