Creamy Mushroom Chicken Meatballs

  • 1 lb Ground Chicken
  • 1 cup Breadcrumbs
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 1/2 cup Grated Parmesan Cheese
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive Oil
  • 8 oz Sliced Mushrooms
  • 1 cup Heavy Cream
  • Fresh Parsley, for garnish

Instructions

  1. Combine the ground chicken, breadcrumbs, egg, minced garlic, chopped onion, salt, pepper, and grated Parmesan cheese in a large mixing bowl. Mix until fully combined and form into 2-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides, about 4-5 minutes. Set aside.
  3. Sauté sliced mushrooms in the same skillet until golden brown and fragrant, about 5-7 minutes.
  4. Pour in the heavy cream and stir to blend with the mushrooms. Simmer gently, adjusting seasoning.
  5. Return the meatballs to the skillet, cover, and simmer for 15-20 minutes.
  6. Serve the meatballs over creamy mashed potatoes, spaghetti, or rice, garnished with fresh parsley.

Notes

Meatballs can be made ahead and stored uncooked in the fridge for up to a day. For lighter options, cook in an air fryer or bake in the oven.
