  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup oil-packed sun-dried tomatoes, drained
  • 2 cups fresh baby spinach

Instructions

  1. Season the chicken with salt, pepper, and Italian seasoning on both sides.
  2. Sear the chicken in a large skillet with olive oil and butter over medium heat for 4-5 minutes on each side until cooked through.
  3. Sauté the minced garlic in the same skillet for about 30 seconds.
  4. Deglaze the skillet with chicken broth, scraping up browned bits and let simmer for 2-3 minutes.
  5. Create the cream sauce by stirring in the heavy cream and Parmesan cheese until smooth.
  6. Add the sun-dried tomatoes and spinach, cooking until the spinach wilts.
  7. Return the chicken to the skillet and spoon the sauce over; simmer for another 2-3 minutes to heat through.
  8. Serve hot, garnished with extra Parmesan cheese if desired.

Notes

Make the sauce ahead of time and store in the fridge. Reheat when ready to serve.
