Creamy Herb Chicken with Mashed Potatoes and Honey Glazed Carrots

A comforting dish featuring tender chicken thighs in a creamy herb sauce, paired with fluffy mashed potatoes and sweet honey-glazed carrots.

  • 4 chicken thighs, bone-in, skin-on
  • 1 cup heavy cream
  • 2 tablespoons mixed herbs (thyme, rosemary, parsley)
  • Salt and pepper to taste
  • 4 large potatoes (Yukon Gold or Russett)
  • 1/2 cup milk
  • 2 tablespoons butter
  • 4 cups carrots, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs generously with salt, pepper, and the mixed herbs.
  3. Heat the olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs for 4-5 minutes on each side until golden brown.
  4. Pour the heavy cream over the seared chicken.
  5. Transfer the skillet to the oven and bake for 25-30 minutes.
  6. Boil the potatoes in salted water for 15-20 minutes, then mash with milk and butter.
  7. Sauté the carrots in a pan with honey until glazed, about 8-10 minutes.
  8. Plate with the creamy chicken, mashed potatoes, and honey-glazed carrots.

Notes

Chicken can be prepared a day in advance; store sauce separately. You can substitute chicken breasts or create a vegetarian version with roasted vegetables.
