Creamy Garlic Shrimp with Mashed Potatoes

  • 2 tablespoons butter (for sautéing)

  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 lb potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter (for mashed potatoes)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Potatoes: Boil cubed potatoes in salted water until tender. Drain and mash with milk and butter, seasoning with salt and pepper.
  2. Sauté the Garlic: Melt butter in a skillet, add garlic, and cook until fragrant.
  3. Cook the Shrimp: Add shrimp to the skillet, cooking until pink and opaque.
  4. Create the Sauce: Pour in heavy cream, add paprika, and stir gently. Simmer until thickened, seasoning as needed.
  5. Serve and Garnish: Plate shrimp over mashed potatoes and garnish with fresh parsley.

Notes

For a lighter dish, substitute heavy cream with half-and-half. Store leftovers in the fridge for up to 2-3 days.
