Coconut Pineapple Banana Bread: A Taste of Paradise!

  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, crushed pineapple, and shredded coconut.
  3. Add the sugar, melted butter, eggs, and vanilla extract to the banana mixture and stir until well combined.
  4. In a separate bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
