Cinnamon Coffee Crinkles are delicious, soft cookies that combine the rich flavors of coffee and cinnamon, making them a perfect treat for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, instant coffee granules, and ground cinnamon to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  8. Roll each ball in powdered sugar and place them on the prepared baking sheet.
  9. Bake for 10-12 minutes or until the edges are set.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, increase the amount of instant coffee granules.
  • These cookies can be stored in an airtight container for up to a week.
  • Feel free to add chocolate chips for an extra treat!
