Christmas Cookie Ice Cream Sandwiches You Can’t Resist!

Delicious and festive ice cream sandwiches made with Christmas cookies.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 pint of your favorite ice cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until smooth.
  4. Add eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Let cookies cool completely.
  10. Once cooled, scoop ice cream onto the flat side of one cookie and top with another cookie to form a sandwich.
  11. Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.

Notes

  • Feel free to use any flavor of ice cream you like.
  • These sandwiches can be made ahead of time and stored in the freezer.
  • Decorate with sprinkles for a festive touch.
