Christmas Cheesecake

A decadent Christmas cheesecake featuring a buttery graham cracker crust, creamy filling, and a festive cranberry jam surprise.

  • 16 oz fresh cranberries
  • 1 cup granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 5 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 24 oz cream cheese, softened
  • 3/4 cup heavy whipping cream
  • 2 tablespoons sour cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1/2 cup granulated sugar
  • 1 vanilla bean
  • 8 oz baking white chocolate
  • 8 oz whipped topping
  • 8 oz fresh cranberries (candied, optional)
  • 1 1/2 cups water (for candied cranberries)
  • 1 1/2 cups sugar (for candied cranberries)
  • 1/2 cup fine sugar (for rolling candied cranberries)

Instructions

  1. Prepare the cranberry jam by combining fresh cranberries, sugar, and vanilla extract in a saucepan and cooking on medium heat for 15 minutes until thickened. Allow to cool.
  2. Make the crust by mixing graham cracker crumbs, brown sugar, melted butter, and vanilla extract. Press into a greased springform pan and spread half of the cooled cranberry jam on top.
  3. Prepare the cheesecake filling by beating cream cheese and sugar until smooth. Gradually add sour cream, vanilla extract, eggs, and cornstarch. Blend in heavy cream and vanilla bean seeds.
  4. Pour the cheesecake filling over the jam layer in the pan. Place the pan in a water bath and bake at 325°F for 70-75 minutes until edges are set. Cool in oven for 1 hour.
  5. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  6. Spread remaining cranberry jam on top and make white chocolate mousse by melting white chocolate and mixing with cream cheese and whipped topping. Spread over the jam layer and decorate.

Notes

For best texture, use full-fat cream cheese and allow ingredients to come to room temperature before mixing. Can be made dairy-free with substitutions.
