Chocolate Covered Strawberry Brownies

Decadent brownies infused with fresh strawberries and topped with a rich layer of melted chocolate, perfect for any occasion.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup chocolate chips (for melting)
  • Additional strawberries for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Melt the butter in a large bowl, then stir in the sugar until combined.
  3. Mix in the eggs and vanilla extract.
  4. Whisk together the flour, cocoa powder, salt, and baking powder in another bowl.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the sliced strawberries gently.
  7. Pour the brownie batter into the prepared pan, spreading evenly.
  8. Bake for about 25-30 minutes, until a toothpick comes out with a few moist crumbs.
  9. Cool the brownies, then melt the chocolate chips.
  10. Drizzle or spread the melted chocolate over the top of brownies.
  11. Top with additional fresh strawberries if desired.
  12. Allow the chocolate to set before cutting into squares.

Notes

These brownies can be made one day in advance and stored in an airtight container. They can also be adapted for air frying.
