Chicken and Spinach Tortilla Wraps

  • 2 large whole-grain tortillas
  • 1 cup cooked shredded chicken (seasoned with garlic and herbs)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp garlic powder
  • 1/2 cup spinach leaves
  • 1/4 cup diced tomatoes

Instructions

  1. In a mixing bowl, combine the shredded chicken, cream cheese, mozzarella, parsley, and garlic powder. Mix until well blended.
  2. Warm the tortillas slightly in a skillet or microwave for 10-15 seconds.
  3. Spread an even layer of the chicken mixture across each tortilla.
  4. Arrange the spinach leaves and diced tomatoes over the chicken.
  5. Roll each tortilla tightly from one end to the other.
  6. Preheat your skillet over medium heat and lightly toast the wraps for 2-3 minutes on each side until golden brown.
  7. Slice in half and serve warm.
