Chicken Scarpariello

  • 4 Chicken Thighs
  • 2 Spicy Sausages, sliced
  • 1 Bell Pepper, sliced
  • 1 Onion, sliced
  • 4 Cloves Garlic, minced
  • 1/2 Cup White Vinegar
  • 1 Teaspoon Red Pepper Flakes
  • Salt and Pepper to taste
  • 2 Tablespoons Olive Oil
  • Chopped Parsley for Garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sear the chicken thighs seasoned with salt and pepper until golden brown, about 5-7 minutes per side.
  3. Add the sliced sausage, onion, and bell pepper, and sauté until the vegetables are tender, about 5-7 minutes.
  4. Incorporate the minced garlic and red pepper flakes, cooking for an additional minute.
  5. Deglaze the pan with white vinegar, scraping up brown bits.
  6. Cover and simmer on low heat for about 20 minutes, until the chicken is cooked through.
  7. Garnish with chopped parsley before serving.
