Chicken Lo Mein

A delightful and comforting Chicken Lo Mein combining tender chicken, lo mein noodles, and vibrant mixed vegetables in a rich sauce.

  • 8 oz lo mein noodles
  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add lo mein noodles and cook according to package instructions. Drain and set aside.
  2. Heat the pan: In a large skillet or wok, heat sesame oil over medium heat until shimmering.
  3. Sauté aromatics: Add minced garlic and grated ginger, stirring constantly for about 1 minute until fragrant.
  4. Cook the chicken: Toss in sliced chicken breast. Cook until browned and cooked through, about 5-7 minutes, stirring occasionally.
  5. Add vegetables: Stir in mixed vegetables and cook for another 3-4 minutes until tender but crisp.
  6. Combine it all: Add lo mein noodles, soy sauce, and oyster sauce, and toss everything together until coated and heated through.
  7. Season and serve: Season with salt and pepper. Remove from heat and sprinkle with chopped green onions before serving.
