- 2 chicken breasts
- 1 large leek, sliced
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup chicken broth
- 1/2 cup cream
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the cubed butternut squash and sliced leeks.
- Drizzle with olive oil, thyme, salt, and pepper, and toss to coat.
- Place the chicken breasts on top of the vegetables.
- Pour the chicken broth and cream over the chicken and vegetables.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the squash is tender.
- Let it rest for a few minutes before serving.
