Chicken Leek and Butternut Squash Bake: A Cozy Delight!

  • 2 chicken breasts
  • 1 large leek, sliced
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the cubed butternut squash and sliced leeks.
  3. Drizzle with olive oil, thyme, salt, and pepper, and toss to coat.
  4. Place the chicken breasts on top of the vegetables.
  5. Pour the chicken broth and cream over the chicken and vegetables.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the squash is tender.
  8. Let it rest for a few minutes before serving.
