Chicken Cauliflower Rice Casserole

A warm, comforting casserole made with tender chicken and fluffy cauliflower rice, enveloped in creamy cheese.

  • 2 cups cauliflower rice
  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 cup cream or cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine cauliflower rice, shredded chicken, cream, cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 25-30 minutes until the cheese is melted and bubbly.
  5. Garnish with fresh parsley if desired, serve warm, and enjoy!

Notes

Can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
