Chicken Breast Mac and Cheese

  • 2 cups cooked chicken breast, diced
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 3 tablespoons butter
  • 1/4 cup flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping)

Instructions

  1. Boil the pasta: Begin by boiling salted water in a large pot. Add your pasta and cook until just al dente (about 1-2 minutes less than package directions). Drain and set aside.
  2. Cook the chicken: In a skillet over medium heat, add a dash of oil. Season your chicken with salt and pepper, then cook for 5-7 minutes per side until golden and fully cooked. Remove from the skillet and let it rest before cutting into bite-sized pieces.
  3. Make the cheese sauce: In the same skillet, melt 3 tablespoons of butter. Add in flour and whisk for about a minute to create a roux. Gradually pour in milk and cream while continuing to whisk, ensuring no lumps form. Add garlic powder, paprika, and salt to taste. Bring to a simmer until slightly thickened.
  4. Melt the cheese: Lower the heat and stir in the cheeses until melted and smooth. You may need to adjust seasoning at this stage.
  5. Combine: In a large mixing bowl, add the cooked pasta and chicken pieces. Pour the cheese sauce over everything and gently mix until evenly coated.
  6. Bake to perfection: Preheat your oven to 350°F (175°C). Pour the mixture into a greased baking dish, spreading it out evenly. For an extra crunch, top with breadcrumbs or extra cheese. Bake for 20-25 minutes or until bubbly and golden on top.
  7. Serve and enjoy: Let it cool for a few moments before serving. When you dig in, revel in the creaminess and the depth of flavor!
