  • 2 medium zucchinis (about 2 cups shredded)
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional fresh parsley or basil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Shred the zucchini using a box grater or food processor until you have about 2 cups.
  4. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  5. Mix ingredients in a large bowl: zucchini, eggs, ½ cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  6. Spread the mixture onto the prepared baking sheet, pressing it into an even rectangle about ½ inch thick.
  7. Bake for 20-25 minutes until golden brown and firm to the touch.
  8. Remove from the oven and sprinkle 1 cup of shredded mozzarella on top.
  9. Return to the oven for an additional 5-7 minutes until cheese is melted and bubbly.
  10. Let cool slightly before slicing into breadsticks.
  11. Garnish with fresh herbs if desired and serve warm with marinara or ranch.

Notes

Make ahead by shredding zucchini a day prior. Avoid skipping the moisture removal for a crisp texture.
