  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, olive oil, milk, and eggs.
  3. In another bowl, whisk together the flour, baking powder, salt, oregano, basil, and black pepper.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the shredded cheddar cheese.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
