- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1 cup shredded sharp cheddar cheese
- 1/2 cup olive oil
- 1/2 cup milk
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, olive oil, milk, and eggs.
- In another bowl, whisk together the flour, baking powder, salt, oregano, basil, and black pepper.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the shredded cheddar cheese.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
