Creamy Garlic Pasta

A rich and creamy garlic pasta dish that is simple to make and perfect for any occasion.

  • Your favorite pasta (penne, fettuccine, or spaghetti)
  • 24 cloves garlic, minced
  • 1 cup heavy cream (or a dairy-free alternative)
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (parsley or oregano) to taste

Instructions

  1. In a large pot, bring salted water to a rolling boil. Add your chosen pasta and cook until al dente, usually a minute or two less than package instructions. Reserve a cup of pasta water before draining.
  2. In a frying pan over medium heat, pour in olive oil and let it warm up. Add minced garlic, sautéing for about 1–2 minutes until golden and fragrant.
  3. Lower the heat and pour in the heavy cream, stirring to combine. Gradually incorporate the reserved pasta water until you achieve your desired sauce consistency.
  4. Gently stir in the grated Parmesan cheese. Season with salt, pepper, and your choice of herbs, allowing all flavors to meld together beautifully.
  5. Toss the drained pasta into the sauce, mixing until each strand is generously coated.
  6. Plate your pasta immediately, garnishing with extra cheese or herbs before serving.

Notes

Make the sauce in advance and store it in the fridge. Just heat it up when ready to serve, adding a splash of pasta water. Customize with proteins or vegetables for a heartier meal.
