  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the oil, eggs, grated carrots, crushed pineapple, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in the walnuts if using.
  6. Pour the batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool before frosting with cream cheese frosting.
