Carrot Apple Zucchini Bread

An incredibly moist and flavorful bread filled with fresh carrots, apples, and zucchini, perfect for a healthy snack or breakfast.

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • A pinch of salt
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup grated apple

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Combine dry ingredients in a bowl: whisk 2 cups of flour, 1 tsp baking soda, 1/2 tsp baking powder, 1 tsp ground cinnamon, 1/2 tsp nutmeg, and a pinch of salt.
  4. Blend the wet ingredients: in another bowl, whisk 2 eggs, 1 cup granulated sugar, 1/4 cup brown sugar, and 1/2 cup vegetable oil until light.
  5. Add the grated zucchini, carrots, and apple, folding until fully incorporated.
  6. Combine the dry and wet mixtures, stirring gently until just combined.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

You can freeze baked loaves wrapped in plastic for freshness. This recipe can also be adapted for an air fryer.
