Caramel Cheesecake Cookies

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup caramel sauce
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy (about 3 minutes).
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet mixture, mixing until just combined.
  5. In another bowl, beat the cream cheese until smooth, then mix in the caramel sauce.
  6. Gently fold the cheesecake mixture into the cookie dough.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about two inches apart.
  8. Bake for 10–12 minutes until the edges are golden brown. Allow cooling for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients and avoid overmixing the dough. These cookies can be frozen for up to 3 months.
