- 4 salmon fillets
- 1 cup fresh blueberries
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- In a small saucepan, combine blueberries, honey, soy sauce, and olive oil. Cook over medium heat until blueberries burst and sauce thickens.
- Place salmon fillets on a baking sheet and season with salt and pepper. Brush the blueberry glaze over the salmon.
- Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through.
- Meanwhile, bring vegetable broth to a boil in a separate pot. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and mix in lemon zest, lemon juice, and parsley.
- Serve the salmon over the lemon herb couscous, drizzling any remaining glaze on top.

- For a spicier glaze, add a pinch of red pepper flakes.
- Feel free to substitute quinoa for couscous for a gluten-free option.
- Fresh blueberries can be replaced with frozen blueberries if necessary.
