  • 4 salmon fillets
  • 1 cup fresh blueberries
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, combine blueberries, honey, soy sauce, and olive oil. Cook over medium heat until blueberries burst and sauce thickens.
  3. Place salmon fillets on a baking sheet and season with salt and pepper. Brush the blueberry glaze over the salmon.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through.
  5. Meanwhile, bring vegetable broth to a boil in a separate pot. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff the couscous with a fork and mix in lemon zest, lemon juice, and parsley.
  7. Serve the salmon over the lemon herb couscous, drizzling any remaining glaze on top.

  • For a spicier glaze, add a pinch of red pepper flakes.
