Blackened Salmon Stuffed with Spinach & Parmesan

A delightful dish featuring blackened salmon filled with creamy spinach and Parmesan cheese, perfect for both weeknight meals and special occasions.

  • 4 salmon fillets (6 oz each)
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 4 oz cream cheese (softened)
  • 2 tbsp blackening seasoning
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté the spinach in a skillet over medium heat for about 3 minutes until it wilts.
  3. Mix the cooled spinach with softened cream cheese and grated Parmesan in a mixing bowl until combined.
  4. Pat the salmon fillets dry and season both sides with blackening seasoning.
  5. Create pockets in each salmon fillet by cutting a horizontal slit in the thickest part.
  6. Stuff these pockets with the creamy spinach mixture.
  7. Place the stuffed salmon on the prepared baking sheet and drizzle with lemon juice.
  8. Bake for 15-20 minutes until flaky and cooked through.
  9. Serve garnished with lemon slices or fresh herbs.
