  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup blackberry puree
  • 2 tbsp all-purpose flour (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the crust: In a bowl, combine graham cracker crumbs, sugar, and ground cinnamon. Pour in melted butter and stir until it resembles wet sand. Press into a 9-inch springform pan.
  3. Mix the filling: Beat softened cream cheese in a large bowl until smooth. Gradually add granulated sugar and vanilla extract, mixing until combined.
  4. Incorporate the eggs: Add eggs one at a time, mixing after each addition.
  5. Add sour cream, heavy cream, and blackberry puree, gently folding until smooth.
  6. Combine and pour the filling over the crust, smoothing the surface.
  7. Bake for 55-65 minutes or until edges are set and center jiggles slightly.
  8. Cool the cheesecake in the oven for 1 hour, then let it cool completely at room temperature.
  9. Chill for at least 4 hours or overnight before serving.
  10. Slice and enjoy your Blackberry Cheesecake.

Notes

For best results, chill overnight. To prevent cracks, allow the cheesecake to cool gradually in the oven.
