  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in batches in the pot.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sautéing until softened.
  4. Add tomato paste, Worcestershire sauce, thyme, and bay leaf, stirring to combine.
  5. Return the beef to the pot and pour in the beef broth.
  6. Add carrots and potatoes, then bring to a boil.
  7. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Adjust seasoning with salt and pepper before serving.

  • For extra flavor, consider adding red wine to the broth.
  • Let the stew cool completely before storing in the refrigerator.
