  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 2 medium potatoes, chopped
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Sear the beef: Heat your heavy skillet over medium-high heat. Add olive oil. Season the meat with salt and pepper, then place it in the pan. Sear for 3-4 minutes on each side.
  2. Remove the beef from the skillet, placing it onto a plate to rest. Toss in your chopped onions and garlic, stirring until they soften—about 3 minutes.
  3. Add chopped carrots and bell peppers, cooking for another 5 minutes.
  4. Return the beef to the skillet, nestling it among the veggies. Pour in the broth and add herbs.
  5. Reduce the heat, cover the skillet, and let everything bubble for about 60 minutes until the beef is fork-tender.
  6. Taste the sauce and adjust seasoning as desired, adding fresh herbs to garnish.
