  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz taco seasoning)
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil

Instructions

  1. Cook the beef filling: In a large skillet over medium heat, add the ground beef and diced onion. Cook until browned and the onion turns tender, approximately 5-7 minutes. Drain excess grease.
  2. Stir in the minced garlic, taco seasoning, and salsa. Let the mixture simmer for 3-4 minutes.
  3. Assemble the chimichangas: Lay a flour tortilla flat and spread a generous spoonful of refried beans down the center. Top with a scoop of the beef mixture and a handful of cheese. Fold in the sides and roll tightly.
  4. Cook the chimichangas: Preheat your oven to 400°F (200°C) for the baking method or heat oil in a skillet for frying. Bake for 18-20 minutes or fry for 2-3 minutes per side until golden brown.
  5. Serve: Let rest for 2 minutes before serving. Customize with toppings like sour cream or guacamole.
