BBQ Bacon Cheddar Potato Skins are a delicious and savory snack, perfect for parties or game day. Crispy potato skins are topped with BBQ sauce, crispy bacon, and melted cheddar cheese.

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for about 45 minutes or until tender.
  5. Once cool, cut the potatoes in half and scoop out some of the flesh, leaving a thin layer.
  6. Brush the insides with BBQ sauce and fill with crumbled bacon and shredded cheddar cheese.
  7. Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Garnish with chopped green onions before serving.
