Bang Bang Salmon Bites Bowl

Crispy and flavorful salmon bites drizzled with creamy Bang Bang sauce, served over rice with fresh vegetables.

  • 1 lb salmon fillets
  • 2 cups cooked rice (jasmine or basmati)
  • 1 cup fresh vegetables (bell peppers, cucumbers, carrots)
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 12 tablespoons sriracha
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the salmon by cutting it into bite-sized pieces.
  3. Create the Bang Bang sauce by mixing the mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper in a bowl.
  4. Coat the salmon pieces in the sauce until evenly covered.
  5. Line a baking tray with parchment paper for easy cleanup.
  6. Bake the salmon for 12-15 minutes or until crispy and cooked through.
  7. Assemble the bowls by serving the salmon bites over rice and topping with fresh vegetables. Drizzle with extra Bang Bang sauce if desired.

Notes

Make the Bang Bang sauce ahead of time to save time during meal prep. Can use an air fryer for quicker cooking.
