  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup dark rum
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat, then add the brown sugar and stir until dissolved.
  3. Add the sliced bananas and cook for 2-3 minutes until they start to caramelize.
  4. Stir in the dark rum and vanilla extract, then remove from heat.
  5. In a separate bowl, mix the flour, granulated sugar, baking powder, and salt.
  6. Add the milk to the dry ingredients and stir until just combined.
  7. Pour the banana mixture into a greased baking dish, then spoon the cobbler batter over the top.
  8. Sprinkle chopped pecans on top if using.
  9. Bake for 30-35 minutes or until the cobbler is golden brown and a toothpick comes out clean.
