Baked Cod in Coconut Lemon Cream Sauce

A delicious baked cod dish featuring a creamy coconut lemon sauce that’s both easy to prepare and full of flavor.

  • 4 cod fillets
  • 1 cup coconut cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. Combine the coconut cream, lemon juice, lemon zest, garlic, and ginger in a mixing bowl. Whisk until smooth, then season with salt, pepper, and chili flakes.
  3. Grease a baking dish and arrange the cod fillets, skin-side down.
  4. Pour the coconut lemon sauce evenly over the cod fillets.
  5. Bake for 15-20 minutes, or until the cod is opaque and flakes easily.
  6. Garnish with fresh herbs before serving.

Notes

For a healthier option, use light coconut milk instead of full-fat coconut cream. This dish can also be made ahead of time and stored in the fridge before baking.
