Instructions

  1. Cook the bacon: In a large skillet, cook your bacon until crispy. Once ready, let it cool on a paper towel and chop it into small pieces.
  2. Mix the filling: In a medium bowl, combine the chopped bacon, cream cheese, chopped jalapeños, shredded cheddar cheese, green onions, garlic powder, salt, and pepper. Blend until thoroughly mixed and creamy.
  3. Assemble the egg rolls: Lay one eggroll wrapper on a flat surface. Place a spoonful of the filling in the center. Fold to form the classic egg roll shape by lifting the bottom corner over the filling and tucking it in, then folding in the side corners, and rolling it up tightly. Seal edges with a little water if needed.
  4. Heat the oil: In a large skillet, heat oil over medium heat, enough to cover the bottom. Ensure the oil is hot enough by testing it with a small piece of filling—the oil should bubble around it.
  5. Fry the egg rolls: Carefully place your egg rolls in the hot oil, a few at a time. Fry for about 3-4 minutes on each side until golden brown and crispy.
  6. Drain and serve: Remove egg rolls from the oil and let them drain on paper towels. Serve warm for the perfect indulgence.

Notes

Customize the spice level by choosing mild or spicy jalapeños. These egg rolls can also be baked or air-fried for a healthier option.
