  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 apples, peeled and diced
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • Butter for cooking

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth.
  2. In a separate bowl, combine diced apples, cinnamon, and brown sugar.
  3. Heat a non-stick skillet over medium heat and add a little butter.
  4. Pour a ladle of crepe batter into the skillet, swirling to coat the bottom evenly.
  5. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  6. Remove the crepe and fill it with the apple mixture, then fold or roll it up.
  7. Repeat with the remaining batter and filling.
  8. Serve warm, dusted with powdered sugar or additional cinnamon sugar if desired.

Notes

  • For a richer flavor, add a pinch of nutmeg to the apple filling.
  • These crepes can be made ahead and reheated in a skillet.
  • Serve with whipped cream or ice cream for an indulgent treat.
